This healthy pumpkin bread is the one I make on repeat from October to New Year. It is mixed in one bowl, sweetened with maple syrup instead of white sugar, made with whole wheat flour and kept moist with Greek yogurt and a modest 1/4 cup of oil. Each of the 10 slices comes in at about 228 calories, 6 g protein and 3.6 g fiber.
It is also the bake of the moment. Searches for pumpkin loaf recipes have climbed roughly elevenfold over the past three months, according to the Rising Trends October 2026 cooking list. Most of the loaves people find are closer to cake. This one still tastes like a treat, but it works as breakfast too.

Healthy Pumpkin Bread Ingredients
Prep: 15 minutes | Bake: 55-65 minutes | Cool: 1 hour 15 minutes | Makes: 1 loaf, 10 slices
- 1 3/4 cups (210 g) white whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 2 teaspoons pumpkin pie spice
- 1 1/2 cups (366 g) canned pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- 1/2 cup (160 g) pure maple syrup
- 1/2 cup (120 g) plain nonfat Greek yogurt
- 1/4 cup (55 g) canola oil
- 1 teaspoon vanilla extract
- 1/2 cup (50 g) chopped walnuts, divided
Weigh the flour if you can. Scooped whole wheat flour packs down fast, and an extra 30 g is the difference between a tender loaf and a dry one.
How to Make Healthy Pumpkin Bread in One Bowl
- Heat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper, leaving the long sides hanging over the edges as handles.
- In a large bowl, whisk the pumpkin, eggs, maple syrup, Greek yogurt, oil and vanilla until smooth and glossy.
- Whisk the baking soda, baking powder, salt and pumpkin pie spice into the wet mixture until no lumps remain.
- Add the flour and fold it in with a spatula just until no dry streaks remain. Stop there; a few small lumps are fine.
- Fold in half the walnuts, scrape the batter into the pan, smooth the top and scatter the rest of the walnuts over it.
- Bake for 55 to 65 minutes, until a toothpick in the center comes out clean or with a few moist crumbs. If the top browns too fast, lay a sheet of foil loosely over the pan for the last 15 minutes.
- Cool the loaf in the pan for 15 minutes, lift it out by the parchment and let it cool completely on a rack, about 1 hour, before cutting it into 10 slices.

Let it cool all the way. Whole wheat quick breads keep setting as they cool, and a slice cut while the loaf is hot will look gummy in the middle even when it is fully baked.
Nutrition per Slice
I worked these out from USDA FoodData Central values for each ingredient, divided across 10 slices. Spices, vanilla and leaveners are left out because they add almost nothing.
| Per slice (1/10 loaf) | With walnuts | Without walnuts |
|---|---|---|
| Calories | 228 | 196 |
| Protein | 6.4 g | 5.7 g |
| Carbohydrates | 30 g | 29 g |
| Fat | 10.4 g | 7.1 g |
| Fiber | 3.6 g | 3.3 g |
The maple syrup adds about 10 g of sugar to each slice. That is still a sweet bake, but it is a long way from a bakery-style loaf built on cups of white sugar and oil. If you want the protein higher, spread a slice with a spoonful of Greek yogurt or nut butter, or pair it with eggs.
Is Pumpkin Bread Healthy?
It depends entirely on the recipe. Classic pumpkin bread is basically spiced cake in a loaf pan: refined flour, a lot of sugar and plenty of oil. The pumpkin itself is the healthy part. Canned pumpkin has 34 calories and 2.9 g fiber per 100 g, and this loaf uses a full 1 1/2 cups of it.
A healthier pumpkin bread swaps in whole grain flour, cuts the sweetener and uses yogurt to do some of the job of the fat. That is exactly what this version does, and it is why it holds up as a breakfast slice rather than only a dessert. If you like this kind of make-ahead breakfast, my baked oatmeal with a pumpkin variation follows the same idea.

Easy Pumpkin Loaf Variations
Chocolate chip pumpkin bread
Leave out the walnuts and fold in 1/3 cup mini dark chocolate chips, saving a tablespoon to sprinkle on top. Dark chocolate keeps it from tipping into dessert territory.
Banana pumpkin bread
Replace 1/2 cup of the pumpkin with 1 very ripe mashed banana and cut the maple syrup to 1/3 cup, since the banana brings its own sweetness. The loaf turns a little denser and more fragrant. If you love banana bakes, try my blender banana protein muffins too.
Pumpkin muffins
Divide the batter among 12 lined muffin cups and bake at 350°F for 20 to 24 minutes, until a toothpick comes out clean. Muffins are easier to grab on busy mornings and freeze one at a time. If you want a recipe built for the muffin tin from the start, try my moist healthy pumpkin muffins.
Cranberry pumpkin loaf
Fold 1/2 cup fresh or frozen cranberries into the batter with the walnuts. The tart pops of fruit make it a nice addition to a holiday brunch table next to a few healthy Thanksgiving sides.
Ingredient Swaps That Work
- Flour: regular whole wheat works but tastes nuttier and bakes up a bit heavier. You can use half all-purpose flour for a lighter crumb.
- Sweetener: honey works cup for cup in place of maple syrup. Watch the top, since honey browns faster.
- Oil: melted butter or melted coconut oil both work. Replacing all the oil with applesauce makes the loaf rubbery, so replace half at most.
- Yogurt: sour cream or a thick dairy-free yogurt both work.
- Eggs: two flax eggs (2 tablespoons ground flaxseed mixed with 5 tablespoons water, rested 10 minutes) work, but the loaf will be more fragile.
Common Mistakes With Healthy Pumpkin Bread
- Using pumpkin pie filling. It is already sweetened and spiced, so the loaf ends up too sweet and too wet. Check the can says 100% pumpkin.
- Overmixing after the flour goes in. Whole wheat flour turns tough if you beat it. Fold, and stop as soon as it comes together.
- Pulling it too early. A wet, heavy batter like this needs the full hour in most ovens. Trust the toothpick, not the color of the top.
- Slicing it hot. Wait for it to cool completely, or the center will look raw even when it is not.
How to Store and Freeze Pumpkin Bread
Because this loaf is made with eggs and yogurt, I keep it wrapped on the counter for a day or two at most, then move it to the fridge in an airtight container. Cold slices taste great toasted in a dry skillet.
For longer storage, freeze it. Slice the cooled loaf, wrap the slices individually and freeze them in a bag. As the FoodSafety.gov cold food storage charts explain, food kept frozen at 0°F stays safe indefinitely and freezer times are about quality, so use them within a few months for the best texture. Thaw a slice on the counter for 30 minutes or warm it in the microwave for about 20 seconds. That makes this loaf an easy add to your breakfast meal prep.
