This slow cooker chicken noodle soup starts with raw chicken breasts, carrots, celery and onion that go straight into the pot with broth and herbs. No browning, no simmering on the stove. You shred the chicken at the end, stir in egg noodles for the last 15 minutes, and get six big bowls with 37 g of protein each.
The one rule that makes or breaks a slow cooker chicken soup: the noodles never go in at the start. Six hours in hot broth turns them into paste. Added at the end, they stay springy, even in tomorrow’s leftovers if you follow the storage tip below.
Makes 6 servings (about 2 cups each). Prep: 15 minutes. Cook: 6 to 7 hours on LOW or 3 to 4 hours on HIGH, plus 20 minutes for the noodles.

Ingredients for slow cooker chicken soup
- 1 1/2 lb (680 g) boneless, skinless chicken breasts
- 3 medium carrots (183 g), peeled and sliced 1/4 inch thick
- 3 celery ribs (120 g), sliced
- 1 medium yellow onion (110 g), diced
- 4 garlic cloves (12 g), minced
- 8 cups (1.9 L) low-sodium chicken broth
- 1 tsp dried thyme
- 1/2 tsp dried rosemary, crumbled
- 2 bay leaves
- 1/2 tsp black pepper
- 1/2 tsp kosher salt, plus more to taste
- 6 oz (170 g) dry wide egg noodles
- 1/4 cup (15 g) chopped fresh parsley
- 1 tbsp lemon juice
Low-sodium broth matters here. Eight cups of regular broth carries a lot of salt, and the soup reduces slightly as it cooks. Start low, then salt to taste at the end, when you can actually judge it.
How to make chicken noodle soup in a crock pot
- Put the carrots, celery, onion and garlic in the bottom of a 6-quart slow cooker.
- Lay the chicken breasts on top of the vegetables in a single layer. Sprinkle with the thyme, rosemary, pepper and salt, and tuck in the bay leaves.
- Pour in the broth. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken reaches 165°F (74°C) and the carrots are tender.
- Lift the chicken out onto a cutting board and shred it with two forks. Fish out the bay leaves.
- Turn the slow cooker to HIGH. Stir in the noodles, cover and cook for 15 to 20 minutes, until just tender.
- Return the shredded chicken to the pot, stir in the parsley and lemon juice, and season with more salt and pepper to taste.

Why this crockpot chicken noodle soup works
Vegetables on the bottom, chicken on top. Carrots take the longest to soften, so they sit closest to the heat. The chicken rests on them, fully covered by broth, and poaches gently instead of drying out at the edges.
Cook the chicken whole, shred it late. Whole breasts hold their moisture far better than cubes over a long cook. Shredding at the end also gives you long, tender strands that look like the soup your grandmother made, not little gray dice.
Noodles go in on HIGH for the last 20 minutes. Wide egg noodles cook right in the broth and soak up flavor without going soft. Check at 15 minutes; they should still have a little bite, because they keep softening in the hot soup.
Lemon and parsley at the very end. A long cook flattens herbs and makes chicken soup taste a bit muted. One tablespoon of lemon juice and a handful of parsley bring it back to life. If the soup tastes dull, it usually needs a pinch more salt or another squeeze of lemon.

Healthy chicken noodle soup nutrition
I calculated these numbers from USDA FoodData Central values for each ingredient (raw chicken breast, carrots, celery, onion, garlic, low-sodium canned chicken broth, dry egg noodles and parsley), divided across 6 servings. Dried herbs, lemon juice and added salt are left out.

| Per bowl (about 2 cups) | Amount |
|---|---|
| Calories | 323 |
| Protein | 37 g |
| Carbohydrates | 30 g |
| Fat | 6 g |
| Fiber | 2.5 g |
| Sodium (before added salt) | 193 mg |
Nearly all of the protein comes from the chicken: 1 1/2 pounds of raw breast carries about 153 g across the pot, or roughly 25 g per bowl before the noodles and broth add the rest. If you add the 1/2 teaspoon of kosher salt, the sodium goes up, so taste before adding more. Want an even bigger protein number? Our high protein soup recipes go up to 41 g per bowl.

Easy swaps and variations
- Chicken thighs instead of breasts. Use the same weight of boneless, skinless thighs. They are richer and almost impossible to overcook, though the fat per bowl goes up a little.
- Rotisserie chicken shortcut. Cook the vegetables in the broth on HIGH for 3 hours, then add 4 cups of shredded rotisserie chicken with the noodles.
- Whole wheat or gluten-free pasta. Small whole wheat shells or a gluten-free short pasta work in place of egg noodles. Gluten-free pasta softens fast, so cook it separately and add it to each bowl.
- More vegetables. Stir a few handfuls of baby spinach or frozen peas in with the chicken at the end; they warm through in a couple of minutes.
- Chicken and rice soup. Skip the noodles and stir in 2 cups (about 370 g) of cooked rice at the end, just long enough to heat it.
- A little heat. A pinch of red pepper flakes with the herbs, or fresh ginger with the garlic, makes a sharper, more warming bowl.

How to store, freeze and reheat it
Soups and stews with meat keep 3 to 4 days in the fridge and 2 to 3 months in the freezer for best quality, according to the FoodSafety.gov cold food storage chart. Portion it into shallow containers so it cools quickly, then refrigerate or freeze.
For meal prep, keep the noodles separate. Noodles keep drinking broth in the fridge, so by day three they are soft and the soup is thick. If you plan to eat this over several days or freeze it, cook the noodles in a pot of boiling water instead, store them in their own container, and add them to each bowl as you reheat. Freeze only the soup base; noodles get mushy after thawing.
Reheat on the stove or in the microwave until steaming hot all the way through. FoodSafety.gov lists 165°F (74°C) as the safe minimum internal temperature for both poultry and leftovers. Thaw frozen portions overnight in the fridge. For a whole week of make-ahead dinners, our freezer meal prep guide shows how to batch soups like this in one afternoon.

Quick questions
Can you cook the noodles in the slow cooker?
Yes, as long as they go in at the end. Turn the cooker to HIGH once the chicken is done, add dry noodles and cook 15 to 20 minutes. Adding them at the start leaves you with broken, mushy noodles and a starchy, cloudy broth.
How long does chicken soup take in a slow cooker?
About 6 to 7 hours on LOW or 3 to 4 hours on HIGH for the chicken and vegetables, plus 15 to 20 minutes for the noodles. Slow cookers vary, so check that the thickest piece of chicken reaches 165°F (74°C) before shredding.
Should I sauté the vegetables first?
You do not have to. Sautéing the onion, carrot and celery in a tablespoon of olive oil for 5 minutes adds a slightly deeper, sweeter flavor, but the dump-and-go version is already full of flavor from the long, slow cook. Do it on a weekend, skip it on a workday.
