Breakfast burrito meal prep is the one Sunday job that pays you back every weekday. In about an hour you cook one big pan of eggs, beans and peppers, roll 8 burritos, and freeze them. On a busy morning you unwrap one, microwave it for about 2 minutes, and walk out the door with a hot breakfast that has 25 g protein and 10 g fiber.

The recipe below is built for the freezer, not just for eating fresh. That changes a few things: the eggs come off the heat slightly wet, the filling cools completely before rolling, and nothing watery (salsa, fresh tomato, sour cream) goes inside. Those three habits are the difference between a burrito that reheats soft and one that turns soggy.

Meal prep breakfast burritos: ingredients

Makes: 8 burritos · Prep: 15 min · Cook: 20 min · Cool: 20 min

  • 1 tbsp olive oil
  • 1 small onion, diced (about 110 g)
  • 1 large red bell pepper, diced (about 150 g)
  • 1 can (15 oz) low-sodium black beans, drained and rinsed (about 240 g)
  • 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp salt, 1/4 tsp black pepper
  • 2 packed cups baby spinach (about 60 g)
  • 10 large eggs
  • 1 1/2 cups liquid egg whites (about 360 g)
  • 1 cup shredded cheddar (4 oz, 113 g)
  • 8 large whole wheat tortillas, 10-inch (about 70 g each)
  • Salsa or hot sauce, for serving (not inside the burritos)

How to make breakfast burritos for the week

  1. Heat the olive oil in a large nonstick skillet over medium heat. Cook the onion and bell pepper for 5 to 6 minutes, until soft and lightly browned.
  2. Stir in the black beans, cumin, smoked paprika, salt and pepper. Cook for 2 minutes, then add the spinach and stir until it wilts, about 1 minute. Cook off any liquid in the pan, then scrape the mixture into a large bowl.
  3. Whisk the eggs and egg whites together. Lower the heat to medium-low, pour them into the same skillet, and stir slowly with a spatula. Pull the eggs off the heat while they still look a little glossy, about 4 to 5 minutes. They finish cooking when you reheat the burritos.
  4. Fold the eggs into the bean mixture. Spread everything on a sheet pan and let it cool completely, about 20 minutes. Rolling hot filling traps steam, and steam makes soggy tortillas.
  5. Warm the tortillas for 20 to 30 seconds in the microwave or a dry skillet so they fold without cracking.
  6. Divide the filling among the tortillas (a heaping 3/4 cup each) and top each with 2 tablespoons of cheddar. Fold in the sides, then roll tightly from the bottom.
  7. Wrap each burrito in a paper towel, then in foil or plastic wrap. Refrigerate the ones you will eat in the next few days and freeze the rest in a labeled freezer bag.

How to freeze breakfast burritos so they don’t get soggy

Most soggy freezer burritos come from moisture, not from the freezer itself. Here is what helps:

- Advertisements -
  • Dry the filling. Cook the vegetables until the pan is dry, and rinse and drain the beans well. Spinach releases water, so it goes in last and cooks just until wilted.
  • Undercook the eggs slightly. Fully set eggs turn rubbery and weep water after a second round of heat.
  • Cool before you roll. This is the step people skip, and it matters most.
  • Use a paper towel layer. It soaks up condensation as the burrito thaws and reheats. Leave it on in the microwave, but remove any foil first.
  • Keep wet toppings outside. Salsa, sour cream, Greek yogurt and avocado go on after reheating.

Freeze the wrapped burritos flat on a sheet pan for an hour before piling them into a bag, so they don’t stick together. If freezer cooking is new to you, our freezer meal prep plan walks through labeling, thawing and what not to freeze.

Take off the foil or plastic wrap and keep the paper towel on.

  • Microwave from frozen: 1 minute on 50% power, flip, then 60 to 90 seconds on full power until hot in the center. Microwaves vary, so check the middle and add 20-second bursts if needed.
  • Microwave from the fridge: about 60 to 75 seconds on full power, flipping halfway.
  • Air fryer for a crisp shell: microwave from frozen for about 1 minute to start thawing the center, then air fry at 350°F for 5 to 6 minutes, turning once.
  • Oven: wrap in foil and bake at 375°F for about 25 to 30 minutes from frozen, then unwrap for the last 5 minutes if you want the tortilla crisp.

Whatever the method, the burrito should be steaming hot all the way through before you eat it.

How long meal prep breakfast burritos last

FoodSafety.gov does not list burritos by name, but its cold food storage chart gives 3 to 4 days in the refrigerator and 2 to 3 months in the freezer for cooked egg casseroles, which is the closest match for an egg filling. So plan on eating fridge burritos within 4 days and frozen ones within about 3 months. The chart also notes that freezer times are about quality: food kept constantly at 0°F stays safe, but texture and flavor slowly fade.

Healthy breakfast burrito swaps and variations

The base recipe is meatless on purpose: eggs, egg whites, beans and cheese already land each burrito at about 25 g protein. These swaps change the numbers above, so treat the nutrition line as the base recipe only.

  • Turkey sausage: brown 8 oz of lean turkey breakfast sausage before the onions and drain it well. It adds protein and that classic diner flavor.
  • Potato: add 2 cups of small diced roasted potatoes for a heartier burrito. Roast them until well browned; pale potatoes turn mealy in the freezer.
  • Green chile: stir a 4 oz can of diced green chiles, drained, into the beans, and swap the cheddar for pepper jack.
  • Lower calorie: use 8-inch tortillas and cut the cheddar to 1/2 cup. You get smaller burritos with the same filling ratio.
  • Dairy free: skip the cheese and add a mashed avocado when serving instead. Avocado does not freeze well inside the burrito.

Fitting burritos into your breakfast meal prep

Burritos are the most portable make-ahead breakfast I know: you can eat one in the car or at your desk without a fork. If you like more variety across the week, pair a batch with jars of overnight oats meal prep or a tray of spinach and cheddar egg muffins. Breakfast burrito meal prep FAQ

Should I wrap freezer burritos in foil or plastic wrap?

Either works if the wrap is snug and the burritos go into a freezer bag with the air pressed out. Plastic wrap is handier for the microwave because there is nothing to remember to remove; foil is better if you usually reheat in the oven.

Can I put salsa inside the burritos before freezing?

It is better not to. Salsa adds water, which soaks into the tortilla during thawing. Serve it on the side, or use a very thick salsa in small amounts.

Do I need to thaw them first?

No. Every method above works from frozen. Thawing overnight in the fridge just shortens the microwave time to about a minute.
