Ground Beef Sweet Potato Bowls With Hot Honey

Advertisements

A ground beef sweet potato bowl is roasted sweet potato cubes, taco-spiced ground beef, a scoop of cottage cheese and sliced avocado, finished with a drizzle of hot honey. My lighter version below takes about 40 minutes, makes 4 bowls, and lands at 39 g protein and 532 calories per bowl.

This combo has been all over TikTok and food blogs this fall. I Am a Food Blog posted its take on September 26 and updated it this week, and Fit Foodie Finds calls the viral bowls worth the hype. I agree, with one catch: most versions pile on two avocados and a lot of hot honey, so the bowl drifts toward dessert. Halve both, use 93% lean beef, and you get the same sweet-spicy-creamy bite in a bowl you can eat every week.

Ground beef sweet potato bowl ingredients

Makes 4 bowls. Prep 10 minutes, cook 30 minutes.

  • 1 1/2 lb sweet potatoes (about 2 medium), peeled and cut into 3/4-inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp salt, divided
  • 1 lb 93% lean ground beef
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 cup water
  • 2 cups low-fat (2%) cottage cheese
  • 1 medium avocado, sliced
  • 2 tbsp hot honey
  • 2 green onions, sliced, and lime wedges for serving

No hot honey in the pantry? Warm 2 tbsp regular honey with a pinch of red pepper flakes for 20 seconds in the microwave and let it sit while everything else cooks.

How to make sweet potato beef bowls

  1. Heat the oven to 425°F. Toss the sweet potato cubes with the olive oil, cinnamon and 1/4 tsp salt, spread them on a sheet pan in one layer, and roast for 25 to 30 minutes, flipping halfway, until tender and browned at the edges.
  2. While the sweet potatoes roast, mix the chili powder, cumin, smoked paprika, garlic powder and remaining 1/4 tsp salt in a small bowl.
  3. Brown the ground beef in a large skillet over medium-high heat for 6 to 8 minutes, breaking it into small crumbles, until no pink remains. Drain off any fat.
  4. Stir the spice mix into the beef and cook for 1 minute, then add the water and simmer for 2 minutes until the beef looks glossy and saucy.
  5. Build each bowl with 1/2 cup cottage cheese, a quarter of the sweet potatoes, a quarter of the beef and a quarter of the avocado. Drizzle with 1/2 tbsp hot honey and finish with green onions and a squeeze of lime.

Want it faster? The sweet potatoes also crisp up well in an air fryer at 400°F in batches; shake the basket a couple of times. If you like the air fryer route, our healthy air fryer recipes use the same trick for crunchy vegetables with very little oil.

Nutrition and protein per bowl

Each bowl has about 532 calories, 39 g protein, 51 g carbs, 20 g fat and 8 g fiber. I calculated this from USDA FoodData Central values per 100 g: raw sweet potato (86 kcal, 1.57 g protein, 3 g fiber), raw 93% lean ground beef (152 kcal, 20.9 g protein, 7 g fat), 2% cottage cheese (81 kcal, 10.4 g protein), avocado (160 kcal, 14.7 g fat, 6.7 g fiber), honey (304 kcal) and olive oil (884 kcal). Hot honey was counted as plain honey. Spices, green onion and lime add very little and are not included.

Almost half the protein comes from the beef and a good chunk from the cottage cheese, which is why this bowl keeps you full far longer than a plain taco bowl. If you are building a whole week of meals around protein, it pairs well with a make-ahead morning routine like our high protein breakfast meal prep.

The viral hot honey cottage cheese bowl vs. this lighter version

The two popular versions linked above share the same base. Here is what I changed and why.

Ingredient (for 4 bowls)Viral versionsThis versionWhy
Avocado2 avocados1 avocadoStill creamy; cuts about 60 calories per bowl
Hot honey4 tbsp (I Am a Food Blog)2 tbspSweet heat without a sugary bowl; about 32 fewer calories per bowl

My honest take: the trend deserves the attention. Warm, sweet potatoes against cold, salty cottage cheese is the whole trick, and the hot honey ties it together. If cottage cheese texture bothers you, blend it smooth for 20 seconds before scooping; it turns into something close to a whipped dip.

Easy swaps and variations

  • Ground turkey or chicken: use the same spice mix and cooking time. Cook poultry until no pink remains.
  • Meatless: swap the beef for two 15-ounce cans of black beans, rinsed and warmed with the spices and water. Protein drops, fiber goes up.
  • Greek yogurt instead of cottage cheese: plain Greek yogurt with a pinch of salt gives the same cool contrast with a smoother texture.
  • Add greens: a handful of baby spinach or shredded romaine under the beef adds volume for almost no extra calories.
  • Rice bowl: for big appetites, add a scoop of brown rice. If you want more fiber-rich bowls like this, see our high fiber meals.

How to meal prep ground beef sweet potato bowls

This bowl is a strong meal prep lunch because the warm parts and the cold parts store separately. Roast the sweet potatoes and cook the beef on Sunday, cool them, and pack them together in 4 containers. Keep the cottage cheese in its tub and slice the avocado the day you eat it so it does not brown.

  • Fridge: cooked beef and sweet potatoes keep 3 to 4 days, the FoodSafety.gov guideline for cooked meat leftovers.
  • Freezer: the cooked beef freezes well; the same chart lists 2 to 6 months for cooked meat leftovers. Thaw it in the fridge overnight.
  • Reheat: warm the beef and sweet potatoes until steaming hot, then add cold cottage cheese, fresh avocado and the honey.

Questions people ask about this bowl

Is a sweet potato beef bowl healthy?

Made this way, yes, it is a balanced meal: lean protein from the beef and cottage cheese, fiber-rich carbs from the sweet potato, and fat from the avocado. The parts to watch are the honey, the avocado and the fat in the beef, which is why this version trims all three.

Can you eat it cold?

You can, and it works surprisingly well as a desk lunch, but the hot-and-cold contrast is what makes it special. If you have a microwave, warm just the beef and sweet potatoes.

Do I have to use cottage cheese?

No. Plain Greek yogurt is the closest swap. Sour cream works for flavor but adds fat and gives up most of the extra protein.

Hooked on cottage cheese bowls? The other one blowing up on TikTok is the cottage cheese pizza bowl: marinara, mozzarella and pepperoni baked over seasoned cottage cheese, with 31 g protein in one ramekin.
