Healthy Crockpot Meals That Aren’t Just Chicken

Healthy Crockpot Meals That Aren’t Just Chicken

Most lists of healthy crockpot meals are really lists of chicken breast with different sauces. Chicken is great, but by week three you want something else. So this roundup leans the other way: a beef stew with 38 g of protein a bowl, pork tenderloin for tacos, turkey chili, three plant-based pots built on black beans, red lentils and chickpeas, and only two chicken soups to round it out.

Every recipe below takes about 15 minutes of chopping, cooks on LOW while you’re at work, and makes 6 servings that keep in the fridge for 3 to 4 days. Calories and protein per serving are listed for each one, calculated from USDA FoodData Central values.

What makes a crockpot meal healthy

The slow cooker isn’t magic. It does the same thing with a lean cut and a fatty one, with a can of beans or a can of cream soup. What makes these recipes lighter is the choices going in:

  • Lean cuts that still go tender. Trimmed chuck and pork tenderloin give you a lot of protein for the calories, and the long, gentle cook keeps them soft.
  • Beans and lentils doing half the work. They add fiber and protein for very little fat, and they thicken the pot without flour or cream.
  • Broth, tomatoes and spices instead of cream soups. Tomato paste, smoked paprika, cumin and a squeeze of lime at the end bring the flavor that canned soup usually covers up.
  • Low-sodium broth, salt at the end. Liquids reduce a little over 8 hours, so seasoning early can leave you with a salty pot.

Healthy beef and pork crockpot recipes

1. Slow cooker beef stew

This is the one I’d make first. Two pounds of trimmed chuck feeds six people, and the potatoes and carrots cook right alongside it. Browning the beef takes 8 extra minutes and is worth it for the deeper flavor, but on a rushed morning you can skip it.

  • 2 lb (907 g) beef chuck, trimmed and cut into 1 1/2-inch cubes
  • 1 1/2 lb (680 g) red potatoes, quartered
  • 5 medium carrots (300 g), cut into thick coins
  • 1 large onion (150 g), chopped, and 3 celery ribs (120 g), sliced
  • 3 tbsp (48 g) tomato paste, 3 garlic cloves, 1 tsp dried thyme, 2 bay leaves
  • 3 cups (720 ml) low-sodium beef broth and 1 tbsp olive oil

Method: Brown the beef in the oil in batches. Put the potatoes, carrots, onion and celery in a 6-quart slow cooker, add the beef, then whisk the tomato paste into the broth and pour it over with the garlic and herbs. Cook on LOW 8 hours or HIGH 4 to 5 hours, until the beef falls apart. Remove the bay leaves and salt to taste.

2. Slow cooker pork tenderloin carnitas

Classic carnitas use fatty pork shoulder. Tenderloin is far leaner, so it needs a shorter cook and a good splash of liquid, but it shreds beautifully for tacos, burrito bowls and salads.

  • 2 pork tenderloins, about 2 lb (907 g) total
  • 1 large onion (150 g), sliced, and 4 garlic cloves
  • 1/4 cup (60 ml) lime juice and 1/2 cup (120 ml) low-sodium broth
  • 2 tsp ground cumin, 2 tsp dried oregano, 1 tsp chili powder, 1 tsp kosher salt

Method: Rub the pork with the spices and salt. Lay the onion and garlic in the slow cooker, set the pork on top and pour in the broth and lime juice. Cook on LOW 4 to 5 hours, until it shreds easily with two forks (pork is safe at 145°F (63°C) with a 3-minute rest, but it needs to go well past that to shred). Shred, toss with the juices, then spread on a sheet pan and broil 3 to 5 minutes for crisp edges.

3. Turkey chili

Lean ground turkey, crushed tomatoes and two cans of kidney beans. The trick is browning the turkey and toasting the spices in a skillet before it all goes into the crockpot; raw ground turkey turns pale and soft in a slow cooker. Then it’s LOW for 6 to 7 hours or HIGH for 3 to 4. The full ingredient list and the stovetop version are in our easy turkey chili recipe.

Per serving: 348 calories, 29 g protein, 10 g fiber.

Vegetarian crockpot meals with beans and lentils

These three are the cheapest pots on the list and the highest in fiber. Their protein is lower than the meat recipes, so I top the bean and chickpea bowls with Greek yogurt, which is included in their numbers.

4. Slow cooker black bean soup

  • 4 cans (15 oz each) low-sodium black beans, drained and rinsed (about 1 kg)
  • 1 large onion (150 g), 1 red bell pepper (120 g), 2 carrots (120 g), 2 celery ribs (80 g), all diced
  • 1 can (14.5 oz / 411 g) diced tomatoes and 4 cups (960 ml) low-sodium broth
  • 4 garlic cloves, 2 tsp cumin, 1 tsp smoked paprika, juice of 1 lime
  • 1 1/2 cups (360 g) plain nonfat Greek yogurt, for topping

Method: Put everything except the lime and yogurt in the slow cooker. Cook on LOW 6 to 7 hours or HIGH 3 to 4. Blend about half the soup with an immersion blender so it’s creamy but still has whole beans, stir in the lime, salt to taste, and top each bowl with 1/4 cup of yogurt.

5. Slow cooker red lentil curry

Red lentils break down into a thick, golden curry with no soaking and no pre-cooking. A single cup of coconut milk is enough to make it rich without tipping it into heavy.

  • 2 cups (384 g) dry red lentils, rinsed
  • 1 large onion (150 g), diced, 4 garlic cloves and 1 tbsp grated ginger
  • 1 can (14.5 oz / 411 g) diced tomatoes and 2 tbsp (32 g) tomato paste
  • 4 cups (960 ml) low-sodium broth and 1 cup (226 g) canned coconut milk
  • 2 tbsp curry powder, 1 tsp ground turmeric, 1 tsp cumin
  • 5 oz (142 g) baby spinach and 2 tbsp lime juice

Method: Add everything except the coconut milk, spinach and lime to the slow cooker. Cook on LOW 6 hours or HIGH 3 hours, until the lentils have collapsed. Stir in the coconut milk and spinach, cover for 10 minutes until the spinach wilts, then add the lime and salt. Serve over rice or with warm flatbread.

6. Chickpea and sweet potato stew

  • 2 cans (15 oz each) chickpeas, drained and rinsed (about 480 g)
  • 2 medium sweet potatoes (500 g), peeled and cut into 1-inch cubes
  • 1 large onion (150 g) and 1 red bell pepper (120 g), diced
  • 1 can (14.5 oz / 411 g) diced tomatoes, 2 tbsp (32 g) tomato paste, 3 cups (720 ml) low-sodium broth
  • 3 garlic cloves, 2 tsp cumin, 1 tsp smoked paprika, 1/2 tsp cinnamon
  • 3 oz (85 g) chopped kale and 1 1/2 cups (360 g) plain nonfat Greek yogurt, for topping

Method: Add everything except the kale and yogurt to the slow cooker. Cook on LOW 6 to 7 hours or HIGH 3 to 4, until the sweet potato is soft. Stir in the kale for the last 20 minutes, mash a few sweet potato cubes against the side to thicken the broth, and top each bowl with 1/4 cup of yogurt.

Two chicken soups worth keeping in the rotation

7. Slow cooker chicken noodle soup

Raw chicken breasts poach on a bed of carrots, celery and onion, then get shredded at the end. The noodles only go in for the last 15 to 20 minutes on HIGH so they stay springy. Full recipe: slow cooker chicken noodle soup.

Tips for better crockpot dinners

  • Start with thawed meat. Frozen chunks take too long to heat through and cook unevenly.
  • Hard vegetables on the bottom. Potatoes, carrots and sweet potatoes sit closest to the heat; meat goes on top.
  • Keep the lid on. Every peek lets out heat and steam and stretches the cook time.
  • Add greens, dairy and citrus at the end. Spinach, kale, yogurt, coconut milk and lime all taste fresher when they don’t spend 8 hours in the pot.
  • Use a thermometer when in doubt. FoodSafety.gov lists 145°F (63°C) plus a 3-minute rest for beef and pork roasts, 165°F (74°C) for all poultry, and 165°F (74°C) for reheated leftovers.

Storing and freezing slow cooker meals

Soups and stews with meat or vegetables keep 3 to 4 days in the fridge and 2 to 3 months in the freezer for best quality, according to the FoodSafety.gov cold food storage chart. Split the pot into shallow containers so it cools quickly, and freeze in single portions so you can thaw one lunch at a time. Leave the yogurt, tortilla strips and fresh herbs off until you serve.

The beef stew, black bean soup, lentil curry and chili all freeze especially well. Potatoes in the stew get a little softer after thawing, which I don’t mind. If you want to batch several of these in one afternoon, our freezer meal prep guide walks through the containers, labels and thawing.

How the nutrition was calculated

For the new recipes on this page, I added up USDA FoodData Central per-100 g values for each measured ingredient (via getfoodfacts.com, which cites the FDC ID) and divided by 6. Dried spices, garlic, ginger and added salt are left out. Canned beans were calculated with USDA’s low-sodium canned black bean values, and the broth with USDA’s reduced-sodium beef broth, so your numbers will shift a little with brands. Numbers for the turkey chili and the two chicken soups come from their full recipe posts.
