1. Lemon herb chicken traybake
You need (serves 4): 4 chicken thighs or 2 large breasts, 1 lb baby potatoes halved, 2 bell peppers, 1 red onion, 2 cups broccoli, 2 tbsp olive oil, juice and zest of 1 lemon, 2 garlic cloves, dried oregano, salt and pepper.
Method: heat the oven to 425°F. Toss the potatoes with half the oil and roast 10 minutes. Add the chicken, vegetables, lemon, garlic and oregano with the rest of the oil and roast 20 to 25 minutes more, until the chicken reaches 165°F.
2. One-pot turkey bolognese pasta
You need: 1 lb lean ground turkey or beef, 1 onion, 1 carrot and 1 celery stalk finely chopped, 2 garlic cloves, 1 can (28 oz) crushed tomatoes, 3 cups low-sodium broth, 8 oz whole-wheat spaghetti broken in half, Italian herbs.
Method: brown the meat with the vegetables in a large pot. Add tomatoes, broth, herbs and the dry pasta, bring to a simmer and cook, stirring often, for 12 to 14 minutes until the pasta is tender and the sauce thick. The pasta cooks in the sauce, so there is no extra pot of water.
3. Tex-Mex quinoa skillet
You need: 1 lb lean ground turkey, 1 onion, 2 garlic cloves, 1 tbsp chili powder, 1 tsp cumin, 1 cup uncooked quinoa (rinsed), 1 can black beans (rinsed), 1 cup corn, 1 can diced tomatoes, 1½ cups low-sodium broth.
Method: brown the turkey with the onion, garlic and spices. Stir in the quinoa, beans, corn, tomatoes and broth, cover and simmer about 20 minutes until the quinoa is cooked. Top with avocado, a little cheese and cilantro.
4. Honey mustard salmon with potatoes and asparagus
You need: 4 salmon fillets, 1 lb small potatoes halved, 1 bunch asparagus, 1 tbsp olive oil, and a glaze of 2 tbsp Dijon mustard, 1 tbsp honey and 1 tbsp lemon juice.
Method: roast the oiled potatoes at 425°F for 15 minutes. Add the salmon and asparagus to the pan, brush the salmon with the glaze and roast 10 to 12 minutes more, until the salmon flakes easily (145°F).
5. Veggie fried rice
You need: 3 cups cooked brown rice (day-old is best), 2 cups mixed vegetables (peppers, carrots, peas, broccoli), 3 eggs or 14 oz firm tofu, 2 green onions, 2 tbsp low-sodium soy sauce, 1 tsp sesame oil.
Method: stir-fry the vegetables in a hot skillet for 4 minutes, push them aside and scramble the eggs or crumble in the tofu. Add the cold rice, soy sauce and sesame oil and toss until hot. Cool leftover rice quickly and refrigerate within 2 hours.
