A chicken shawarma bowl gives you everything you love about a shawarma wrap, minus the giant pita: warmly spiced, charred chicken thighs over rice with a crunchy tomato-cucumber salad, pickles and a garlicky tahini yogurt sauce. This version makes 4 bowls with about 530 calories and 44 g of protein each, and the chicken roasts on one sheet pan at 425°F (220°C), no rotisserie needed.

Below is the full recipe with US and metric amounts, a calorie comparison between this bowl and a typical restaurant shawarma wrap built from USDA data, and tips for meal prep and storage.

What makes it taste like real shawarma

Shawarma is a Levantine street food: thin layers of marinated meat stacked on a vertical spit and shaved off as the outside crisps. The name comes from the Turkish word çevirme, meaning “turning,” and it’s a close cousin of Turkish döner and Greek gyros. A home oven can’t copy the spit, but it can copy the two things that matter most: a bold spice marinade and plenty of browned edges.

  • Thighs, not breasts. Boneless thighs stay juicy at high heat and brown better, which is closer to the rich, slightly fatty texture of spit-roasted shawarma.
  • A warm spice blend. Cumin, paprika, coriander, turmeric and a little cinnamon do most of the work. Lemon juice and garlic keep it bright.
  • High heat, then the broiler. Roasting at 425°F (220°C) cooks the chicken through, and 2 minutes under the broiler adds the charred bits you’d get from the spit.
  • Slice after resting. Thin slices across the grain give you that shaved look and soak up the sauce.

Calories in shawarma: restaurant wrap vs this bowl

There’s no single answer to how many calories are in shawarma, because every shop builds it differently. To give you a fair reference point, we built a typical chicken shawarma wrap from USDA ingredient data: a large 90 g pita, 5 oz (140 g) of roasted chicken thigh, 2 tablespoons of creamy mayonnaise-style garlic sauce, plus tomato and pickles. That comes to about 700 calories, 44 g protein and 34 g fat.

Wrap values calculated from USDA FoodData Central: pita, white, enriched (FDC 174915), 90 g; chicken thigh, meat only, roasted (FDC 172388), 140 g; mayonnaise, regular (FDC 171009), 28 g; tomato (FDC 170457), 30 g; dill pickles (FDC 168558), 20 g. This is an example build, not any specific restaurant’s numbers.

The protein lands in the same place. The difference is the sauce and the bread. The 2 tablespoons of mayo-based garlic sauce alone add about 190 calories, while the yogurt-tahini sauce in the bowl adds about 72 and brings 6 g of protein with it. Swapping a big pita for 3/4 cup of rice also trims a little, and the salad adds volume for very few calories.

Real-world wraps often run higher than our example. Many shops add fries inside, use a larger flatbread or pour on more sauce, and each of those pushes the total up.

Easy swaps and variations

  • Lighter bowl: use half the rice and fill the space with chopped romaine. Cutting the rice to about 6 tbsp (60 g) per bowl saves roughly 77 calories.
  • More fiber: swap the white rice for brown rice, bulgur or freekeh, or spoon in a few tablespoons of chickpeas.
  • Chicken breast: it works, but pull it at 165°F (74°C) and slice it right away so it doesn’t dry out. Breast meat is leaner than thigh, so the bowl drops a little in fat.
  • Stovetop: sear the marinated thighs in a hot cast-iron skillet over medium-high heat for 5 to 6 minutes per side, until they reach 165°F (74°C).
  • Grill: grill over medium-high heat for 5 to 7 minutes per side for the smokiest edges.
  • Extra toppings: pickled turnips, sliced radishes, a drizzle of chili oil, a spoonful of hummus or a few crisp baked pita chips.

For a full mezze-style spread, serve the bowls with a scoop of high protein hummus, a side of parsley-packed Lebanese tabbouleh or a few pieces of baked falafel. On a cold night, a cup of red lentil soup on the side turns it into a feast.

Meal prep and storage

Chicken shawarma bowls hold up well for weekday lunches if you pack the parts separately. Keep the chicken and rice in one container, the salad in another, and the sauce in a small cup so nothing gets soggy. If you like this kind of lunch, our chicken and rice meal prep plan uses the same build with different flavors.

  • Raw marinated chicken: FoodSafety.gov’s cold storage chart gives raw chicken pieces 1 to 2 days in the fridge, so cook it within a day of marinating.
  • Cooked chicken: the same chart lists 3 to 4 days in the fridge and 2 to 6 months in the freezer for cooked poultry leftovers.
  • Reheating: warm the chicken and rice until steaming hot, 165°F (74°C), then add the cold salad and sauce.
  • Freezing: freeze the sliced chicken on its own. The salad and yogurt sauce don’t freeze well, so make them fresh.

Chicken shawarma bowl FAQ

Is a chicken shawarma bowl healthy?

It can be a balanced meal. This version has lean protein from chicken and Greek yogurt, vegetables in every bite and a measured portion of rice. Most of the extra calories in shawarma come from oily sauces and big flatbreads, so the sauce choice matters most.

What spices are in shawarma?

Blends vary by cook and region, but cumin, paprika, coriander, turmeric and a little cinnamon are common for chicken. Some cooks add allspice, cardamom or a pinch of cloves. Garlic and lemon in the marinade are just as important as the dry spices.

Can I use store-bought shawarma seasoning?

Yes. Use about 2 tablespoons for 1 1/2 lb (680 g) of chicken, and check the label before adding the full amount of salt, since many blends already include it.

What sauce goes on a shawarma bowl?

Garlic sauce and tahini sauce are the classics. The yogurt-tahini sauce here combines both flavors with fewer calories than an oil- or mayo-based garlic sauce. A squeeze of lemon and a few dashes of hot sauce work too.
