Overnight oats are the easiest healthy breakfast you can make ahead: stir oats and liquid together in a jar at night, and breakfast is ready when you wake up. The problem is that the same jar gets boring by Thursday. These overnight oats recipes fix that. Each one is a full, tested recipe on its own page, with exact amounts, calories and protein per jar, so you can pick by taste, by protein, or by what is already in your fridge.
Start with the basic ratio below, then use the table to choose your next jar.
The Basic Overnight Oats Ratio
Almost every recipe here is built on the same simple base. For one jar:
- 1/2 cup (40 g) old-fashioned rolled oats
- 3/4 cup (180 g) milk, or 1/2 cup milk plus 1/3 cup Greek yogurt for a thicker, higher-protein jar
- 1 tablespoon (12 g) chia seeds (optional, but it is what makes the jar thick and creamy)
- A pinch of salt, 1/4 teaspoon vanilla and 1 to 2 teaspoons maple syrup or honey
Stir, wait 5 minutes, stir again so the chia doesn’t clump, then refrigerate for at least 6 hours. With milk only, that base comes to about 300 calories and 13 g of protein. The full method, and why the second stir matters, is in our guide to overnight oats with chia seeds.

High-Protein Overnight Oats
1. Protein Overnight Oats (43 g Protein)
The highest-protein jar here, made with a scoop of whey and Greek yogurt. The trick is the order: shake the powder into the milk first, then add everything else, so the jar never turns chalky or gritty. The recipe also explains which powders thicken overnight and how to adjust. Get the protein overnight oats recipe.
2. Overnight Oats with Yogurt (23 g Protein)
No powder needed. Equal parts oats, plain Greek yogurt and milk give a thick, tangy jar that tastes a little like cheesecake. It is the easiest ratio to remember, and the page compares Greek, regular and dairy-free yogurt side by side. Make overnight oats with yogurt.

Flavored Overnight Oats
3. Peanut Butter Overnight Oats
The most common complaint about peanut butter oats is a cold lump of peanut butter on top. This recipe loosens it with syrup and a splash of milk first, so it spreads through the whole jar. It comes with PB banana, PB&J, chocolate and a lighter powdered peanut butter version. See the peanut butter overnight oats recipe.
4. Pumpkin Overnight Oats
A full third of a cup of canned pumpkin per jar, so it actually tastes like pumpkin, plus pumpkin pie spice and Greek yogurt for a custard-like texture. One can makes about five jars. Make pumpkin overnight oats.

Dairy-Free and Basic Overnight Oats
5. Dairy Free Overnight Oats
Plant milk alone usually gives a thin jar. Chia and hemp hearts fix that and bring the protein up to about 19 g with soy milk. The page includes a plant milk comparison and five vegan flavors. Get the dairy free overnight oats recipe.
6. Overnight Oats with Chia Seeds
The base recipe behind most of the jars above, with six flavors and the protein in each. If you are new to overnight oats, start here. Learn the chia overnight oats ratio.

7. Overnight Oats Meal Prep
Five jars in about 15 minutes on Sunday, with a shopping list and three flavors. The plan splits the work in two rounds: three jars mixed on Sunday and two finished on Wednesday night, so none of them sit too long. Follow the overnight oats meal prep plan.
How long do overnight oats last? Plan on 3 to 4 days in a fridge at 40°F (4°C) or below. FoodSafety.gov’s cold food storage chart doesn’t list overnight oats by name, so we use the 3 to 4 day window it gives for prepared foods. Add fresh fruit, nuts and granola the morning you eat each jar.
Tips That Work for Every Jar
- Use old-fashioned rolled oats. Quick oats turn mushy overnight and steel-cut oats stay hard.
- Mix the wet ingredients first. Yogurt, peanut butter and protein powder all clump if they go in after the oats.
- Stir twice. Once when you mix and again 5 minutes later, so chia spreads out instead of sinking.
- Don’t skip the salt. A small pinch makes oats taste sweeter and less flat.
- Loosen in the morning. Jars thicken in the fridge. A splash of milk and a stir brings them back.
