Greek Yogurt Recipes That Go Way Beyond the Breakfast Bowl

Greek Yogurt Recipes That Go Way Beyond the Breakfast Bowl

The best Greek yogurt recipes use that tub in three ways: as a thick, creamy base (overnight oats, parfaits, chia pudding), as a lighter stand-in for mayo, sour cream or heavy cream (chicken salad, white chili, tzatziki), and as moisture in batters (pancakes, muffins). Below are 11 tested ideas from the Lestta kitchen, sorted by meal, with calories and protein per serving for each.

My honest take: once you start swapping Greek yogurt into savory food, the breakfast bowl becomes the least interesting thing you do with it. The chili and the chicken salad are the two I make most.

Greek yogurt breakfast recipes

1. Overnight oats with yogurt

Equal parts rolled oats, plain nonfat Greek yogurt and 2% milk (40 g oats, 1/2 cup or 120 g yogurt), plus a little honey or maple, vanilla and cinnamon. Stir in a jar and chill at least 6 hours. The yogurt makes it thick and tangy instead of soupy. About 330 calories and 23 g protein per jar. Full ratios and flavor swaps in the 1:1:1 overnight oats with yogurt recipe, and more jars in the overnight oats recipes hub.

2. Chia pudding with Greek yogurt

Chia seeds (30 g) set in a mix of half milk, half Greek yogurt (1/2 cup or 120 g), sweetened with maple and topped with raspberries. The yogurt turns the usual gel into something closer to a mousse. Chill at least 4 hours. About 342 calories, 22 g protein and 14 g fiber per jar. Get the method for chia pudding with Greek yogurt that sets thick.

3. Protein pancakes

Blend rolled oats, a scoop of whey, 1/2 cup (120 g) Greek yogurt, two eggs, a banana and baking powder. The yogurt is what keeps these from turning rubbery, a common problem with protein-powder pancakes. Rest the batter 5 minutes, then cook. About 377 calories and 30 g protein per serving of 4 pancakes. Recipe: protein pancakes that aren’t rubbery.

4. Strawberry almond Greek yogurt parfait (new)

The two-minute breakfast I fall back on when there is nothing prepped. No granola, so the crunch comes from almonds and the sweetness mostly from ripe berries.

  • 1 cup (227 g) plain nonfat Greek yogurt
  • About 1 cup (150 g) sliced strawberries
  • 2 tbsp (14 g) sliced almonds
  • Optional: a drizzle of honey and a pinch of cinnamon

Spoon a third of the yogurt into a glass or jar, add a layer of strawberries, then repeat twice. Scatter the almonds on top right before eating so they stay crisp. For meal prep, layer the yogurt and fruit in jars and keep the almonds in a separate small bag.

5. Healthy chicken salad

Cooked chicken breast, celery, red grapes and walnuts in a dressing that is 3/4 cup (170 g) Greek yogurt to just 2 tbsp mayo. That 6:1 ratio keeps the creamy, classic taste without a mayo-heavy bowl. 329 calories and 41 g protein per 1-cup serving. Recipe: healthy chicken salad with Greek yogurt and grapes.

6. Chicken shawarma bowl with garlic yogurt sauce

Spiced chicken thighs over rice with a tomato-cucumber salad, finished with a garlic tahini sauce built on 3/4 cup (170 g) Greek yogurt. The sauce alone adds 6 g protein per bowl. About 530 calories and 44 g protein per bowl. Recipe: chicken shawarma bowl with garlic yogurt sauce.

7. Healthy white chicken chili

Chicken breast, two cans of white beans, green chiles and broth, made creamy at the end with 3/4 cup Greek yogurt instead of heavy cream. The trick is to temper it: whisk a ladle of hot broth into the yogurt first, then stir it in off the heat so it doesn’t curdle. Works on the stove or in a slow cooker. About 316 calories and 38 g protein per 1 1/2-cup serving. Recipe: healthy white chicken chili without heavy cream.

8. Tzatziki

The classic Greek sauce: 1 1/2 cups (340 g) whole-milk Greek yogurt, grated English cucumber, garlic, olive oil, lemon and dill. Squeezing the cucumber dry is the one step that decides whether it stays thick. Serve it with grilled chicken, falafel or raw vegetables. About 31 calories and 2 g protein per 2 tbsp. Recipe: homemade tzatziki that never turns watery.

9. Labneh

Labneh is Greek yogurt with a pinch of salt, strained in cheesecloth for 12 to 24 hours until it is thick enough to spread like soft cheese. Finish with olive oil and za’atar and eat it with warm pita or cucumbers. About 62 calories and 5.1 g protein per 2 tbsp (with the oil drizzle). Recipe: easy labneh with Greek yogurt.

Baking and snacks with Greek yogurt

10. Banana protein muffins

Oats, ripe bananas, 3/4 cup (170 g) Greek yogurt, eggs, whey and a little maple syrup, all blended in one blender jar. The yogurt replaces most of the fat you’d find in a bakery muffin and keeps the crumb soft for days. About 150 calories and 8.5 g protein per muffin. Recipe: banana protein muffins you make in one blender.

11. Frozen strawberry Greek yogurt bark (new)

A freezer snack that tastes like a creamsicle. Makes 8 pieces.

  • 2 cups (454 g) plain nonfat Greek yogurt
  • 1 1/2 cups (225 g) sliced strawberries
  • 1/4 cup (28 g) sliced almonds
  • Optional: 1 to 2 tbsp honey and 1/2 tsp vanilla stirred into the yogurt
  1. Line a quarter sheet pan or 9×13-inch dish with parchment.
  2. Stir the yogurt with the honey and vanilla, if using, and spread it about 1/2 inch (1 cm) thick.
  3. Press the strawberries into the top and scatter the almonds over them.
  4. Freeze flat until solid, about 3 hours, then break or cut into 8 pieces.
  5. Keep in a freezer bag with parchment between layers and let a piece sit 3 to 5 minutes before eating so it softens slightly.

Per piece (without honey): about 63 calories, 6.7 g protein, 5 g carbs, 2 g fat and 1 g fiber. Unsweetened, it is quite tart, so taste the yogurt before spreading and add honey to your liking.

How much protein is in Greek yogurt?

Plain nonfat Greek yogurt has about 10 g of protein per 100 g, according to USDA FoodData Central. That works out to roughly 23 g protein and 134 calories per cup (227 g), or about 15 g protein in a single 5.3-oz (150 g) cup. That’s why it shows up in so many of the high-protein recipes on this site, from the low calorie high protein meals roundup to the cottage cheese recipes it often trades places with.

Easy ways to cook with Greek yogurt

  • For sour cream: swap 1:1 on tacos, chili and baked potatoes. Nonfat is the tangiest; 2% or whole-milk tastes closest to sour cream.
  • For mayo: replace most of it, not all. Keeping a spoonful of mayo, like in the chicken salad above, keeps the flavor familiar.
  • For cream in soups: temper it with hot broth first and add it off the heat. Boiling yogurt makes it grainy.
  • In baking: it adds moisture and tenderness to muffins and quick breads, so you can use less oil or butter.
  • As a marinade: its acidity helps spices cling to chicken. Use plain, unsweetened yogurt for anything savory.

Whichever recipe you start with, buy plain yogurt and flavor it yourself. Flavored cups can’t go into chili, tzatziki or chicken salad, and plain gives you control over the sugar in the sweet ones.
